Avocado Lime Crema

A smooth, tangy sauce for tacos, roasted vegetables, grain bowls or grilled fish.

Makes: approximately 1¼–1½ cups. Time: 10 minutes. Contains dairy.

Ingredients

  • 1 ripe Hass avocado, about 150 g flesh
  • ½ cup sour cream
  • 2 tablespoons fresh lime juice
  • ½ teaspoon finely grated lime zest
  • ½ small garlic clove, grated or minced
  • ¼ teaspoon fine sea salt, plus more to taste
  • 2–4 tablespoons cold water
  • Optional: 2 tablespoons cilantro leaves and tender stems

Method

  1. Put the avocado, sour cream, lime juice and zest, garlic, salt, optional cilantro and 2 tablespoons water in a blender or small food processor.
  2. Blend until completely smooth, stopping to scrape the sides as needed.
  3. Add the remaining water a little at a time until the crema falls from a spoon in a thick ribbon. Keep it thicker for dipping or thinner for drizzling.
  4. Taste and adjust the salt or lime juice. Transfer to a covered container and refrigerate until serving.

Make ahead: For the brightest color, make it the day you serve it. Cover the surface directly to limit browning. Stir before serving; if it thickens, loosen it with a little cold water.
